Keep your BBQ Guests Happy with a Zesty Appetizer: Grilled Jalapeno Poppers

Summertime is almost here and I know everyone is excited to start firing up the grill. The problem is, oftentimes, is that good barbecue takes time. So what do you do with all of those hungry guests while the brisket is cooking? You question is answered with a quick and easy grilled appetizer called Jalapeno Poppers. These aren't your average deep fried Jalapenos, instead, we grill them up wrapped in bacon for an extra savory and smokey flavor.

Grilled Jalapeno Poppers

- Jalapenos, tops cut off and hollowed (you can also cut them in half for smaller portions)
- Cream cheese (about 6-8 Jalapenos to one 8oz package)
- Bacon (about 1-2 slices per popper)
- Toothpicks (to secure bacon on poppers)

Be sure to take the seeds and vein out of all the jalapenos. Not only does the removal get rid of that crazy heat the seeds are known for, but also allows more space for the cream cheese. Fill the hollow jalapenos with cream cheese. Take a strip or two of bacon and wrap the jalapenos in a loose coil to cover it all. Secure the bacon with a couple of toothpicks. Grill until bacon is cooked and crispy, about 5 minutes depending on the heat of your grill. Remove toothpicks and serve.

Cara's Tips: Get creative with the bacon, you don't have to use the regular stuff, there's a variety of different types of bacon and flavors out there. Also, try soaking the toothpicks in water for about an hour before grilling, this allows easier insertion into the jalapenos and they won't be as likely to burn on the grill. You can also add ingredients to the cream cheese filling, such as chopped cilantro or garlic powder, there are several possibilities.

Grab a beer and get grilling!
