Impress your Mom on Mother's Day: Fresh Strawberry Cake

This is a very old recipe that I make to impress the women in my life, and it always goes other well. The bright berry flavor and light whipped cream make for a fresh yet decadent treat. make this for you mom and impress her on mother's day. Let her feel good, knowing that she taught you well.

Strawberry Yogurt Cake:

- 1 1/4 cups Flour
- 6 tablespoons softened Butter
- 3/4 cup Granulated Sugar
- 1/2 cup Strawberry Jam or puréed Strawberries
- 2 Eggs
- 1/2 teaspoon Vanilla Extract
- 1/4 cup Buttermilk
- 1/4 teaspoon Baking Soda
- 3/4 teaspoon Baking Powder
- 1/4 teaspoon Salt

For Topping:
- 8oz tub Whipped Cream Topping
- about 1 pint Fresh Strawberries, sliced (feel free to leave a few whole for the very top)

Preheat oven to 350 degrees. Grease and flour one 9 inch cake pan and set aside (you can use the baking no stick spray if you want). With an electric mixer, cream together butter and sugar. Add eggs one at a time and mix until incorporated into the cream mixture. Add strawberry jam or purée and vanilla and mix to combine. In a separate bowl, sift together dry ingredients and add dry mixture to wet mixture in parts, alternating the dry mixture additions with the buttermilk. Pour batter into prepared cake pan, and bake for 20-30 minutes or when a toothpick inserted comes out clean. Allow cake to cool before applying the topping. When cake is cooled completely and removed from the pan, dollop the whipped cream topping over the top of the cake and spread evenly. Place a layer of freshly sliced strawberries over the whipped cream topping, in random order or even a ring pattern. Garnish with a few whole strawberries.

Cara's Tips: You can use other berries as well, individual or mixed, depending on what your mom's favorite berry is. Just remember to use the same measurement of berries as in the recipe. you can also double the recipe and make a 2 layer cake.

You mom will love it! Try it out and see if it's not the best mother's day she's ever had.
