A Southern Dessert with a Kick! Crowned Blackberry Cobbler

There's nothing we Southerners love more than the comforting sweet treat of homemade cobbler.  For some reason however, we always had a preconceived notion that cobbler is a painstaking recipe that only your true southern grandma knows how to make.  That couldn't be further from the truth!  Cobblers are very easy to make, and also great to whip up in a pinch for guests with the right pantry staples.  As you may already know, I usually have a trick up my sleeve when it comes to the classics, and this recipe is no exception.


Cara's Crowned Blackberry Cobbler

Filling:
-  3 tablespoons Sugar
-  3 tablespoons Flour
-  1 teaspoon Lemon Juice
-  1 shot Crown Royal (blended whisky)
-  16oz bag frozen Blackberries

Pastry
- 1 stick Butter
- 1 cup Flour
- 1 cup Brown Sugar
- 1 teaspoon Cinnamon
- 1/2 cup rolled oats (raw oatmeal)

Preheat your oven to 375 degrees and prep an 8x8 Pyrex baking dish with either smeared butter or non-stick spray.  Mix filling ingredients and pour into baking dish.  In a separate bowl, mix pastry ingredients until you get a crumbly strudel texture.  Be sure to use cold butter for the pastry, that way it stays crumbly and not turn into dough.  Sprinkle pastry crumble on top of berry filling.  Bake for 35 minutes until the crust turns lightly golden brown.  Allow to cool halfway before serving.

 Personally speaking, I'm really happy to have this recipe finished.  It took me almost a year or tweaking to get this recipe just the way I wanted it.  It really is true about the simple recipes making the most impact.  With fewer ingredients, it's important to get the balance just right.  Don't let that discourage you from creating your own recipes, always try to challenge yourself!
